Low Carb Hasselback Zucchini
My source of inspiration
I have discovered the idea of cutting and filling zucchini in fan shape on Pinterest. I just love to browse here and look for delicious recipe inspirations. On Pinterest, I have meanwhile created several nice boards with my favorite dishes, from low carb, superfoods and pizza to healthy family recipes. The recipe for my Hasselback zucchini is super fast and easy to prepare! Quick and, above all, easy are the most important properties that a recipe must have for me. Because after a hard day with a lively toddler I would like to cuddle in the evening only with a tea on the couch. When it gets dark outside so early, doing nothing is not hard at all. Children and non-working evenings are just too precious to work long in the kitchen, so I like the simple and delicious recipe.
I filled the zucchini with a mixture of Gruyère, Chester and Mozzarella, which melted beautifully in the oven. The topping for the zucchini fan is also sour cream with spring onions and fried bacon cubes. I am so happy that I discovered this low carb dish for myself. I am sure I will soon approach more creative fillings. For example, I can imagine feta and spinach really well.Bake for 20 minutes.
Please do not despair if the zucchini breaks through on infestation. The cheeses and baking in aluminum foil stop them again.
Enjoy the delicious low carb Hasselback zucchini!
